From Coffee Cherry to Exportable Green Bean
Processing begins after harvest and has a major influence on the cup. Method availability is crop-, estate-, and lot-specific, and is confirmed against each buyer’s quotation and quality brief.
Natural
Whole coffee cherries are dried before the fruit is removed. Well-managed natural lots can offer fuller body, fruit-forward sweetness, and lower perceived acidity.
Washed
Fruit is removed before drying and the parchment coffee is cleaned through controlled fermentation and washing. The result is commonly prized for clarity, structure, and clean acidity.
Honey
Some mucilage remains on the parchment during drying. Honey processing can balance sweetness and body with the clarity associated with washed coffee.
Anaerobic
Coffee ferments in a controlled, oxygen-limited environment before drying. Time, temperature, and lot management can create distinctive aromatic and flavour profiles.
Carbonic
Whole cherries ferment in a carbon-dioxide-rich environment under a defined protocol. These specialised lots may show vivid fruit character and are supplied subject to availability.
Monsooned
Green coffee is exposed to humid monsoon winds under controlled warehouse conditions. The process changes colour, moisture behaviour, acidity, body, and the classic monsooned flavour profile.
Fermented
Lot-specific fermentation protocols may be used to develop targeted cup characteristics. The process, duration, drying method, and quality controls should be documented for buyer evaluation.
